Eat Local Starts Next Thursday at Valley; $40 for three courses

Valley at The Garrison debuts EAT LOCAL Thursdays
Eat Local menu to showcase a different seasonal ingredient from local farms every week

On Thursday, March 27 Valley restaurant will debut its new Eat Local menu concept.  Every Thursday, co-chefs Brandon Collins and Vinny Mocarski, along with pastry chef Laura Digiorno, will create a three-course menu that is built around one seasonal ingredient sourced from one or more local farms.  Their first Eat Local menu is an ode to mushrooms, sourced from Wiltbank Farms in Saugerties, NY.

“When we all sat down to discuss Valley’s menus for the 2008 season, the three of us wanted to offer a weeknight menu for the community that showed our deepened commitment to support local farms and their products,” says Brandon Collins.  “This seemed like the perfect idea.”

Vinny Mocarski adds “Eat Local is a wonderful opportunity for us to widen our net of farmer resources and keep our creative juices flowing.  It presents some interesting challenges during the off-peak months, but that’s part of the fun for us.”

Eat Local on Thursdays is a 3-course meal, with each course having a choice of two or three options.  It is the only menu that will be offered at Valley on Thursday.  The price for the menu is $40 per person, exclusive of tax and gratuity.

First course
Mushroom Soup
Oyster Mushrooms, Chives, Ronnybrook Crema

Shiitake Mushroom Raviolo
Lemon ricotta, Spinach, Garlic Broth

Chicken Breast
Murrays chicken, mushroom Bread pudding, Watercress

Short Rib
Mushroom crusted, parsnip puree, baby carrots

Goat cheese panini
Truffle honey, Port Glazed mushrooms

Chocolate Torte
Red beet ice cream

Valley at The Garrison is open for dinner Thursday – Saturday, 5:30pm – 9:30pm and for Sunday brunch
from 11am to 2pm.  The World’s End Bar is open Thursday – Saturday from 4pm and Sunday from noon.  Valley is located at The Garrison, 2015 Route 9 and Snakehill Road, Garrison, NY.
