Locally Grown, Readers’ Choice: Pizza Zucchini

Pizza Zucchini
Makes 6 servings.

2 large zucchini
Pizza sauce (bought or made by hand – I make it from fresh market tomatoes)
Fresh mozzarella cheese

Make sauce, if desired.
Cut zucchini into 3-4 inch pieces and slice in half. Remove the seeds.
Boil or steam the zucchini for 3-5 minutes (depending on size) until crisp/tender.
Place the zucchini on a rimmed baking sheet.
Fill the cavity where the seeds were with warmed sauce, then top with a slice of fresh mozzarella.
Broil until cheese melts and becomes a little brown in spots.
