Eat Local at Valley at the Garrison


Eat Local Thursdays at Valley celebrates one ingredient from one local farm in each of three courses.  The $35 menu changes every week and is the only menu offered at Valley on Thursday evenings.  Each week’s menu is available online at on Monday.

Spokeswman Geralyn Graham tells me co-chefs Brandon Collins and Vinny Mocarski are like kids in a candy store working with the 20 different kinds of heirloom tomatoes that Garrison Farms organic grower Brian Bergen has been carefully tending all season.  I missed putting up their recipe from last night’s dinner in time (take my word, it looked great), but here’s a list of the rest of ingredients to appear on Valley’s Eat Local menus as summer peak turns to autumn harvest:

•    Renewal Farm Summer Zucchini
•    Breezy Hill Orchard Apples
•    Madura Farms Popcorn
•    Garrison Farm Broccoli Rabe
