Gluten is a protein found in wheat, rye and barley.  People who have celiac disease, estimated to include 2.5 million Americans must avoid all gluten.  Celiac disease is an autoimmune disease in which gluten stimulates the body’s immune system to attack the lining of the small intestine, resulting in both severe acute symptoms and also serious long term health consequences.  There is no cure for celiac disease, but it can be totally controlled and the damage to the intestine reversed by avoiding all dietary gluten, including all baked goods made from wheat, rye or barley flours.  Additionally, some parents find that their special needs children do better on gluten-free diets.
