Food Arts, a trade magazine that covers restaurants and hotels, has a 5-page spread on the kitchen at chef-owner Anthony Goncalves’s 42 at the top of the Ritz-Carlton in White Plains. Lots of KP — that’s like FP, but of kitchens.
He’s got a 14 1/2-foot, custom built Bonnet, a large gas burner, a charbroiler, two planchas and two flattops. There’s also a combi-oven, a stone hearth oven, a pair of fyers and a tabletop steamer. Not to mention a vintage Berkel slicer.
