When I was looking for lamb shoulder to make a lamb ragu recipe, I was so happy a friend reminded me to call Steve’s in Congers. Steve ground the meat for me — he calls it “chopped lamb” but it was ground — and even sold me some fresh ricotta to go with my sauce.
Steve has most cuts you want, and if he doesn’t, he’ll order them. He’s also got a few other items to make it a little more of a one-stop shop. More photos, after the jump.
