Creative Cocktails: Recipes from Harper’s in Dobbs Ferry


Clark Moore at Harper's in Dobbs FerryFor the barrel-aged cocktail story I did a couple of weeks ago,  a few friends and I spent the evening getting to know Clark Moore, the self-proclaimed “barman” who makes terrific cocktails at Harper’s in Dobbs Ferry.

While the menu at Harper’s is creative (and the drinks I’ve tried in the past have been terrific), for the purposes of our “research,” we decided to see what Clark would come up with when left to surprise us with cocktails. This is a sign of a truly enthusiastic and learned bartender: whether he (or she!) can ask you a few questions about your preferences and come up with a drink on his own that you’ll enjoy. Clark was an ace.

Later, I asked him to share the recipes, which I’ll now share with you. Keep in mind that Clark is really really into cocktails, liqueurs and mixers included, and searches out unusual and hard-to-find bottles. (If you’re interested in recreating these drinks, many of the ingredients can be purchased at Rochambeau Wines & Liquors in Dobbs.)

Here’s a look at the flight of drinks he made for our group.

Alhambra Vesper

1 ounce House Infused Hot Smoked Paprika Vodka
1 ounce Gabriel Boudier Saffron Infused Gin
1/2 ounce Cocchi Americano
1/2 ounce Fresh Lemon
Orange Twist

Shake and served in a chilled coupe glass.


Cleaver at Harpers in Dobbs Ferry

2 ounces Rittenhouse Rye
1/2 ounce Dubonnet Rouge
1/2 ounce Grand Marnier
1 Dash Harper’s housemade Cherry Bitters.

Stir and serve on the rocks in a lowball glass.

Love in the Cemetery

2 ounces Zaya Rum (12 Year)
1 ounce Batavia Arrack
1/3 ounce Fresh Lime
1/4 ounce Velvet Falernum
3 Drops Bitter End Jamaican Jerk Bitters
Lime Wheel garnish

Shake and serve on the rocks in a lowball glass.

Spiced Cognac Manhattan

2 ounces Henessey V.O. Cognac
1 ounce Carpano Antica Formula
1/4 ounce St Elizabeth Allspice Dram
House Brandied Cherries

Orange Twist

Stir and serve on the rocks in a lowball glass.

 Martinez (Clark’s Version)

2 ounces Tanqueray 10 Gin
1 ounce Carpano Antica Formula
1 Dash Regan’s Orage Bitters No. 6
1 Dash Bitter Truth Jerry Thomas Decanter Bitters
Lemon Twist
Stir and strain into a chilled coupe glass.
