Crabtree’s Kittle House chef Marc Lippman is the new executive chef at Castle Hotel & Spa in Tarrytown (formerly Castle on the Hudson). Jay Lippin replaced Lippman at Kittle House in Chappaqua, a post he held in the early 1990’s, after Lippman left during Hudson Valley Restaurant Week. “As a celebrated and multi-award-winning chef, his culinary achievements will bring a new culinary dimension to the Castle Hotel & Spa’s signature restaurant, banquet and catering facilities,” said Gilbert Baeriswil, General Manager of Castle Hotel and Spa, in a press release.
Chef Marc Lippman studied culinary arts in Paris and has served as executive chef at several destination hotels, resorts and restaurants since he began his culinary career at New York City’s Bouley in 1991. Lippman has been the executive chef at Miami Beach’s Raleigh Hotel, New York City’s Wild Blue at Windows on the World and Las Ventanas Al Paraiso, a Rosewood Hotel in Los Cabos, Mexico. He also held the position of executive chef at the hip South Norwalk restaurant Ocean Drive. Lippman opened his first restaurant, Fraîche, in Fairfield’s Greenfield Hill neighborhood in November 2007.
The well-known chef is expected to source locally from the Hudson Valley for the menu at Castle Hotel & Spa. He is planning to introduce Auberge cuisine, a concept based on country-style comfort food prepared with carefully sourced quality ingredients.
