This first bout of seriously cold weather has us craving something warm, flavorful and most importantly— off the beaten path.
We’re in love with all of the noodle dishes that chef Jose David Martinez is whipping up in his Haverstaw kitchen at the fun and funky UNoodles Snack Bar. For the Udon Sakana, Martinez makes a fresh fish broth, then adds salmon, Napa cabbage, cilantro, ginger, scallion, white onions and a little carrot (not too much so it doesn’t get sweet). All the parts come together to make layers of spice and sea, and the soup supports fresh baby bok choy and enoki mushrooms the way a bubbly tide pool coddles its oysters. An unusual combination of exotic and hearty, while still light and flavorful. This is a dish that is meant to be savored.
