Must Try Dish of the Week: Baby Beets at The Inn at Pound Ridge


The newly opened Inn at Pound Ridge by Jean-Georges is a hot ticket right now. Reservations are hard to come by because chef and owner Jean-Georges Vongerichten has a fan following that extends well beyond the northern end of Westchester. And for the fans, the menu is a good mix of successful dishes from restaurant past, like the salted caramel sundae with candied popcorn or his popular Peekytoe crab crostini.

Baby beets is an ingredient we’ve seen before from Vongerichten. And we love the way chef Blake Farrar prepares them here, artfully placed atop tangy yogurt and a drizzle of sweetly acidic Balsamic vinegar, with a sprinkling of fresh herbs. The dish appears on the starter menu for $13.
