Must Try Dish of the Week: Garganelle with Rabbit Ragu at The Twisted Oak, Tarrytown

Simple and delicious, locally sourced farmhouse fare that’s brimming with soothing Italian flavors. That’s what chef Michael Cutney and partner Jake Parenti are after with their new restaurant, The Twisted Oak, in Tarrytown. The new spot also happens to be one of our picks for romantic dining on Valentine’s Day this week.

Chef Cutney makes all of the pasta fresh in-house, and we love the way he expertly tosses garganelle with braised rabbit ragu, mustard greens and oyster mushrooms. The dish is rustic and understated in the best way possible, and the earthy vegetable flavors hold their own against the delicate pasta and tender ragu.

Menus at The Twisted Oak are printed daily, so we can’t guarantee this dish will be offered on the night you snag a reservation, but you can be sure Cutney will be cooking up something similarly effortless and delicious.
