Chef Mogan Anthony’s Brussels sprouts dish hits all the marks: smokey, savory and sweet all in one crispy bite.
The process for one of the most popular menu items at Village Social in Mount Kisco starts two days earlier, when Anthony pickles thinly sliced shallots in an apple cider vinaigrette. The Brussels sprouts are halved dipped in the fryer for forty seconds, and then tossed with pickled shallots, a splash of the vinaigrette, slivered almonds and salt to taste, and a healthy dose of smoked paprika.
This vegetarian plate makes a great side dish or starter to share, if you’re willing.
