Must Try Dish of the Week: Chianti Risotto at Velo, Nyack

Risotto is a dish that demands a lot of TLC. Constant stirring, gentle liquid additions, whispering sweet nothings so that it doesn’t dry out on you.  In short, it’s the perfect restaurant order.

The chianti risotto at Velo in Nyack is an absolute dame. A beautiful ruby red bowl-full of rich risotto, and sprinkled with earthy black truffles and shaved pecorino. Part bistro, part wine bar, Velo is small and intimate, but not cramped. We like it  best for date night or a long overdue ladies night out.

Velo, 12 N. Broadway, Nyack, 845-353-7667, www.velonyack.comHours: Open for dinner only, starting at 5 p.m. Tuesdays through Sundays. Reservations suggested.
