Great American BBQ pop-up in White Plains: New on the Dining Scene

Inspired by the summer tradition of seasonal seaside clam shacks, Sam’s of Gedney Way has opened a summer restaurant: the Great American BBQ Co. Through Oct. 15, out on the covered patio, you’ll be able to order pulled pork, beef brisket, St. Louis ribs, and the signature popular sweet corn pudding.

Wait, signature? Yes, even though the restaurant is a pop-up, Sam’s has run a catering division under the GABBQ name for 16 years, and executive chef Joseph Sasso, along with pitmaster Pancho Diaz, have spent 16 years honing GABBQ’s unique style.great american bbq white plains

“It’s kind of a hybrid — we’re a little bit of Texas, a little bit of Carolina,” says Sasso. “We just lightly baste it. It’s New York barbecue; it’s like barbecue light!”

New additions for the restaurant include chipotle buffalo wings, barbecue shrimp tacos, plantain chips, warm barbecue potato chips served with blue cheese-bacon dip, Texas corn toss bites made with local corn, the “rodeo burger” (Angus beef topped with cheddar, bacon, avocado, and chipotle BBQ mayo), and cedar plank blackened salmon.

A big draw has been the GABBQ Pig Roast, which requires 48 hours’ notice and can be served at the table (or at a location of your choosing) for a minimum of 15 guests.

A 30-pound suckling pig is brined, dry-rubbed for 24 hours, then stuffed with fruit, herbs, onions and peppers and wrapped in banana leaves before roasting in a La Caja China box, a technique popular in Cuba and South America. It’s accompanied by quite a spread: house special “dry rub shake,” malt vinegar, hot sauce, soft tortillas, potato buns, biscuits, lettuce, pico de gallo, salsa verde, Carolina barbecue sauce, baked beans, cole slaw, chow-chow, and grilled fruit.

“Barbecue is great, we all love barbecue,” says owner Peter Herrero. “And most barbecue companies don’t have a chef of Joe’s caliber, who knows fish, who knows meats, who knows salads, who knows so many different things. And if you look at our presentation you really see the difference.”

  1. Thanks, Megan, for this report. On the recommendation of a friend we tried the BBQ pop-up at Sam’s the last time it was served and found the food to be ok. I’m glad to see that there have been changes (the pig roast sounds good) and I will be trying it again.
