Latin Twist: The Pineapple-Jalapeño Mojito

These days I’m thinking in terms of threes! Not sure exactly why—but I do like the trilogy thing!  I’ve introduced you to my version of the classic mojito, and then, I presented you with a new favorite, the strawberry-jalapeño mojito. So, mis amigos, today I bring you the third of my mojito posts. Readers, let me introduce you to the Pineapple-Jalapeño Mojito.

Brimming with sprinkles of  jalapeño and diced pineapple, this colorful cocktail is perfect even without rum (add water in lieu of rum!). And, my friends, it’s as refreshing as it is colorful. So, on this, yet another sunny summer weekend, I suggest you have one of these mojitos. As always, enjoy! ¡Buen provecho!

 

 

Latin Twist: the Pineapple-Jalapeño Mojito

If you're making these mojitos for a crowd, simply multiply amounts, and pour into a pitcher for serving!

Ingredients

  • Serves 1
  • Ingredients
  • 1 1/2 tablespoon diced pineapple chunks, plus additional for garnish
  • 6 to 10 fresh mint leaves (plus more to garnish!)
  • 1 teaspoon diced jalapeño or to taste, plus additional for garnish
  • About 1 teaspoon of sugar, or according to taste
  • Juice of 1/2 lime, or to taste
  • 1 cup ice
  • 2 ounces light rum
  • 1 to 2 ounces unsweetened pineapple juice
  • Ice

Instructions

  1. In a bar glass, combine the pineapple, mint, jalapeño, and sugar and muddle until you smell the fabulous fragrances of fresh-mint with pineapple.
  2. Add the lime juice.
  3. Add one cup of ice.
  4. Add the rum.
  5. Add the pineapple juice.
  6. Add the ice and shake well.
  7. Pour into the prepared glass, garnish, and serve!

Maybe it was the dinner parties my mom always threw—or the hours I spent prepping and cooking alongside her (and then on my own!). Or maybe it was array of fabulous dishes that my family sampled in New York City’s richly diverse restaurants, but I’ve loved creating, savoring, and sharing food for as long as I can remember.
