If you’re looking to serve a local turkey this Thanksgiving, you’d better act fast.

“We sell about 260 turkeys every year,” says John Ubaldo of John Boy’s Farm in Pound Ridge. “And we always sell out.”

As long as you act fast, though, shopping local means you have choices. There are heritage breeds, which are more costly as they grow slowly and require more effort and feed to raise, as well as some pasture-raised varieties like Broad Breasted White or Bronze turkeys, generally the most popular American breed.

John Boy’s Farm isn’t the only retailer in the area that will sell out this season. Stone Barns in Pocantico Hills also expects to be cleaned out (the order form is already online). Most farms request at least two weeks notice for Thanksgiving turkey orders.

Glynwood Farm, Cold Spring

Pasture-raised and fed certified organic grain, Glynwood’s turkeys are available for fresh pick-up on Wednesday before Thanksgiving. Turkeys are generally 18 to 26 pounds, though exact size can not be guaranteed. 362 Glynwood Rd., Cold Spring, 845-265-3338, www.glynwood.org.

Price: $7 per pound, and a $50 deposit is required.

Hemlock Hill Farm, Cortlandt Manor

Owned and operated by the DeMaria family since 1939, Hemlock Hill is one of the oldest family farms in the Lower Hudson Valley. Their broad-breasted white turkeys are organic and pasture-raised. All sizes are available. 500 Croton Avenue, Cortlandt Manor, 914-737-2810, hemlockhillfarm.com.

Price: $4.99 per pound

John Boy’s Farm, Pound Ridge

John Ubaldo’s farm offers two varieties: a rare heritage from the 1800’s called White Holland, and the more typical Bronze turkeys, which are one of the most popular American breeds. Turkeys are roughly 16 to 24 pounds. 65 Westchester Ave., Pound Ridge, 914-646-4263.

Price: $5.75 per pound.

Stone Barns Center, Pocantico Hills

Offering both Broad Breasted White Turkeys (14 to 24 pounds) and heritage birds (8 to 17 pounds), Stone Barns turkeys sell out quickly every year. All of the turkeys were raised at Stone Barns and roamed the pastures freely. 630 Bedford Rd., Pocantico Hills, 914-366-6200, www.stonebarnscenter.org.

Price: Broad Breasted White, $5.75 per pound. Heritage birds, $9.50 per pound.

Willow Ridge Farm, Putnam Valley

Pasture-raised heritage turkeys, Bourbon Red breed, are available from 8 to 17 pounds. Bourbon Reds are known for their dark, rich meat. Turkeys can be picked up at farm the Sunday or Monday before Thanksgiving. 174 Canopus Hollow Road, Putnam Valley, 845-528-2535, www.willow-ridge-farm.com.
